“An Apple a Day” . . .

Fall is upon us. And with fall comes apples! I should say, apple season, because apples are available all year.  But they are better now. And, if you don’t want to literally EAT your apples raw, you can eat them in this delicious Apple Congealed Salad!

I know that congealed salads have fallen out of favor currently, so my daughter and sister tell me, but both Mama and I love them. So, I’m sharing this recipe . . . just in case . . . there are others like Mama and me . . . who still like congealed salads!

Making the Apple Congealed Salad . . .

A congealed salad is not difficult to make. In fact, it is fairly simple. It consists of mixing the gelatin with boiling water, mixing that with the chopped fruit and nuts, then adding the dressing mixture and refrigerating. Simple.

For this Apple Congealed Salad, the first step is to chop the apples and pecans.

Then, mix the chopped apples, pecans and pineapple into the gelatin mixture.

Next, make the dressing: Salad Dressing, cottage cheese, and whipping cream.

Mix all ingredients together.

Pour the mixture into an 9×9-inch pan and refrigerate.

Cut in squares to serve.

Yum!!! This Apple Congealed Salad is delicious, full of fresh apples, pineapple, and chopped pecans. While I made it for fall because of apple season, this congealed salad is pretty enough for spring or summer. It’s a perfect way to have your “apple a day”:)

This Apple Congealed Salad is a delicious way to eat "an apple a day" . . . in a sense. It is full of fresh chopped apples, chopped pecans, and pineapple. Simply mix together and refrigerate!

  • 1 (3-ounce) package lime gelatin
  • 1 (20-ounce) crushed pineapple, drained, reserving juice
  • 2 medium Red Delicious apples, chopped
  • 1 cup chopped pecans
  • 3/4 cup small curd cottage cheese
  • 1/2 cup salad dressing (I used Miracle Whip)
  • 2/3 cup heavy cream
  1. Measure the drained pineapple juice in a 1 cup measuring cup. Add water to equal 1 cup. Pour into a small saucepan and bring to a boil. Remove from heat.

  2. Add gelatin to the boiling liquid and stir until dissolved.

  3. Add drained pineapple, apples and pecans. Stir to combine.

  4. In a separate bowl, mix the cottage cheese, salad dressing and heavy cream until combined well.

  5. Add the cottage cheese mixture to the gelatin mixture. Stir to combine well.

  6. Pour into a 9x9-inch square casserole or dish that has been sprayed with non-stick cooking spray.

  7. Cover with plastic wrap and refrigerate at least 3-4 hours before serving.
