B-L-T Salad . . . Delish!

My B-L-T Salad . . . a nice summer addition!

Because I had a lot of lettuce and tomatoes left over from our family dinner with John and Carrie, I decided to do some research and create a B-L-T Salad. All the recipes I saw looked simple to make. The ingredients varied . . . some called for avocados, some did not. Some called for croutons, some did not. Some called for corn, some did not. So, I decided to go for it, and add all the goodies to my B-L-T Salad!

Though I’m not a fan of avocados, and would have left that ingredient off, Lynn likes it. So, I added it to the top. The rest of the ingredients were “layered”:

  • Chopped Romaine Lettuce
  •  Sliced tomatoes
  • Whole Kernel Corn
  • Diced bacon
  • Cheese (Candace suggested using Mozzarella cheese. I would have preferred Cheddar, I think)
  • Croutons
  • Avocado slices (You can dice the avocados and layer them instead of placing them on top.)
  • Dressing (We decided to use an Avocado-Ranch Dressing. It was a bit too “avocado-y for me. Next time I’m going to go for just the plain Ranch:)

If you make it in a “layered” fashion, you can make several in an assembly line manner. Put all the lettuce on the plates, then go down the line adding the rest of the ingredients.

B-L-T Salad Recipe

Ingredients for 4 salads:

  • 4 cups chopped romaine lettuce (1 cup per salad)
  • 2 tomatoes, cut in slices (I used 2 1/2 slices for my salad)
  • 1/4 cup whole kernel corn (I used frozen, but you can use canned corn, drained)
  • 4 slices crisp bacon, diced (1 slice per salad)
  • Cheese (Cheddar, mozzarella, or your choice. Sprinkle as much or as little as you like)
  • Croutons, optional
  • Avocado slices
  • Ranch dressing (Hidden Valley has an Avocado Ranch dressing if you prefer that)

On each plate add the ingredients above in layers, beginning with the romaine lettuce and ending with the avocado slices in the center . Drizzle your favorite dressing on top.

NOTE: If you prefer, you can layer all the ingredients for all 4 salads in a large salad bowl. Gently toss after you add the cheese and croutons. You can either drizzle dressing over the salad and toss, or let everyone add their own dressing. I like the latter because some people like more dressing than others.
