This Country Chicken Casserole is easy to make and a great choice when you want a one-pot (casserole) meal. The potato chips on the top give it an added "crunch". Xiomara’s Authentic Chicken Enchiladas!

Xiomara's Authentic Chicken Enchiladas, when you want a real treat! I've been wanting to post Xiomara's Authentic Chicken Enchiladas for a while. Xiomara made them for our ladies group at our church in the fall, but I had to wait until she translated the recipe for me in order to post it. I think you are in for a REAL treat! Xiomara and her chicken enchiladas . . . Xiomara and her husband, Benjamin, are from Guatemala. And, as she was showing us, their chicken enchiladas are prepared much differently from the ones we are used to here in the US.
