Easy Strawberry Pie for Pi(e) Day!

Celebrate Pi(e) Day with an Easy Strawberry Pie! Easy Strawberry Pie is a great pie for Pi(e) Day, which is celebrated every year on March 14th. And, bloggers everywhere will be posting their favorite pies for you to try. I decided to post this pie, which is a variation of Mama's Fresh Strawberry Pie, but easier. Because of the mild winter, fresh strawberries are already available here. But, even if they aren't in your area, you can always buy fresh strawberries at your local grocery store. Last week, I decided to adapt Mama's Fresh Strawberry Pie recipe, using a jello filling instead of Mama's cooked filling. This is what you would typically get in a restaurant that serves strawberry pie. I got the filling recipe from my cousin, La Nan, … [Read more...]

Watergate Salad, the perfect salad for St. Patrick’s Day!

Watergate Salad, a perfect salad for St. Patrick's Day! I have been making Watergate Salad during the month of March, and for St. Patrick's Day, for several years. In fact, ever since I first found the recipe! While I can't say a "green" fruit salad was on my list of "must haves", I do LOVE this one! It is an easy, creamy green (pistachio pudding) fluff salad! And, as in years past, I made it for our dinner tonight! If you have never heard of Watergate Salad, essentially it is "a side dish, salad or dessert salad made from pistachio pudding, canned pineapple, whipped topping, and marshmallows." (Source: Wikipedia) However, the recipe I made tonight, from Liza Ashley's "Thirty Years at the Mansion", is a bit different. It has all the … [Read more...]

Pineapple Slaw like Grandmama made!

Yum, yum, and more yum! Mama was telling me that both she and Grandmama Hall made Pineapple Slaw during their years of cooking for their families. I had seen a recipe for Pineapple Slaw in a blog post on the website of Plain Chicken. At the time, I didn't know that this, too, was a family favorite, though I'm sure the recipes are not the same. Mama can't remember where her recipe is nor anything about Grandmama Hall's except eating it. The Pineapple Slaw Recipe . . . Steph, of Plain Chicken, says that she created this Pineapple Slaw after eating a similar one at a restaurant. Her recipe is made super simple by using a bag of pre-shredded slaw mix. I'm certainly in favor of any good shortcuts, and I think this is one for sure! The only … [Read more...]

Pasta Primavera!

Pasta Primavera, a Pizza Classic special . . . Years ago my first husband and I opened a pizza restaurant in our hometown of Hazen, Arkansas. It was called Pizza Classic, and was located in the old Aycock building which also housed the old movie theater. We renovated the building, and once we opened, the restaurant was instantly a success. I sold the business in 1992 prior to moving to Little Rock, but I kept many of our signature dishes. One of those was the Pasta Primavera, a pasta dish that can be made with fresh or frozen vegetables, drizzled with chicken broth infused with Parmesan cheese and Italian seasoning. It is then topped with sliced almonds which adds a delightful crunch to this tasty dish. We served the Pasta … [Read more...]

Pina Colada Cake, perfect for spring!

A Perfect Cake for Summer! It's summer time and the living is easy! Especially with this delicious Pina Colada Cake! One Saturday, Candace and the grandchildren came to our house and we made this Pina Colada Cake. It was a delicious cake with a creamy filling, and covered with a pineapple-coconut-whipped topping frosting and LOTS of coconut! We made two recipes that day, but this one was a star! The Pina Colada Recipe . . . I had never heard of a Pina Colada Cake, but I could quickly see that it would be a delicious cake to make. The Pina Colada Cake starts with a cake mix. I generally prefer to make all my cakes from scratch, I have made other similar cakes from a cake mix in the past. All have been good, but I think this one is … [Read more...]
