Fire Roasted Mexican Beef Soup . . .

If you like Beef Taco Soup, you are going to LOVE this Fire Roasted Mexican Beef Soup! Candace created this soup by tweaking her Beef Taco Soup, and it is super delicious! It has just the right amount of “heat” in every bite . . . perfect for the Mexican food lovers out there (like ME!!!)

We’ve all enjoyed her Beef Taco Soup for years, and now we are adding this Fire Roasted Mexican Soup to our list of favorite soups!

Fire Roasted Mexican Soup vs. Beef Taco Soup . . .

In looking at both the Fire Roasted Mexican Soup and the Beef Taco Soup, there are definite similarities. Both, of course, are made with ground beef–(we use ground round to cut down on the amount of fat in the soup). Both have onion, garlic, and corn in them. That’s about it as far as how these two soups are alike.

There are distinct differences, however:

  • The Fire Roasted Mexican Soup has fewer ingredients
  • It uses fire-roasted salsa, where the Beef Taco Soup uses tomato sauce, tomatoes, and Rotel
  • The Fire Roasted soup has a bag of roasted corn blend; the taco soup has canned chili beans and corn
  • The Fire Roasted Mexican soup uses both beef broth and chicken broth, where the taco soup water
  • Candace added brown rice to this new soup. The Beef Taco Soup has corn chips.

There are a few other minor differences. But as you can see, while both are “Mexican” beef soups, they are quite different.

Making the Fire Roasted Mexican Soup . . .

When you make this Fire Roasted Mexican Soup, you will be delighted in how easy it is. The hardest thing might be finding the roasted corn blend and fire roasted salsa! Candace got the roasted corn blend at Sam’s Wholesale. I did see where Del Monte has a Fire Roasted Corn Blend. That might be another option, if you can’t find the Baja brand. Also, the Fire Roasted Salsa is available on I haven’t checked in the grocery store to see if the salsa is available here or not.

There are just a few steps in making this soup:

  • Brown the meat with the chopped onion and garlic
  • Add all other ingredients and simmer.
  • Garnish to serve.

Simple . . . Easy . . . Delicious! A perfect soup for any season of the year, if you love Mexican foods! Why not make a batch, freeze part or share with a friend? I’m sure they will love it!

Fire Roasted Mexican Beef Soup

Fire Roasted Mexican Beef Soup Recipe


  • 1 1/2 pounds ground round
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2-3 jars fire roasted salsa
  • 1 (12-ounce) bag Baja roasted corn blend
  • 4 cups chicken broth
  • 2 cups beef broth
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic salt
  • Salt and pepper
  • 1 cup brown rice, cooked according to package directions
  • Cilantro and avocado, for garnish


  1. In a large pot, brown the ground round with the onion and garlic. Drain off grease, if needed.
  2. Add the salsa, corn blend, chicken broth, beef broth, cumin, garlic salt, salt and pepper to the cooked beef. Bring to a boil, then reduce to simmer while rice cooks.
  3. Add the cooked rice to the soup mixture.
  4. Garnish each bowl with chopped fresh cilantro and a slice of avocado.
