Jennifer’s Chicken and Veggie Fry, a delicious and easy main dish!

Every week, I go teach my son, Trey, and daughter-in-law, Jennifer’s three children piano lessons . . . three of my TEN grandchildren–Bethany, Brady and Benson. They are so smart and talented, I count it an honor and a joy to teach them. And, just about every time I go, Jennifer bags supper up for me to take home for our dinner! And, last week was no exception! She made her, Jennifer’s Chicken and Veggie Fry! And, I can tell you, it was delicious!!!

Jennifer, like me, cooks like our mothers cooked. I call it “country cookin'”. Nearly always there is meat and vegetables. And, in this recipe, both are served in the same pan. How’s that for simplicity and convenience?

Making Jennifer’s Chicken and Veggie Fry . . .

Jennifer not only sent me home with this wonderful main dish for our dinner, she also gave me her recipe so I could share it.  It seems like a really easy recipe with ingredients that just about everyone likes. And it is great for summer and early fall when fresh yellow squash are still available.

To make Jennifer’s Chicken and Veggie Fry, there are just a few preliminary steps:

  • Chop the onion
  • Peel the potatoes and quarter them
  • Cut the squash into quarters as well

Once the prep of the veggies is done, you are ready to make this main dish.

The veggies are browned in oil until tender. The chicken is cooked in a separate skillet. Once done, the chicken is cut in pieces and all stirred together again, covered until heated through. How easy is that?

Jennifer added the fresh parsley for garnish. Doesn’t it make this dish lovely? And, I can tell you, this is one chicken dish you will definitely want seconds on! In fact, Lynn ate his helping and half of mine, then wanted more! I guess I need to make him his own pot of Jennifer’s Chicken and Veggie Fry!

This delicious and easy chicken and veggie main dish will make you want to ask for more! It's meat and veggies all in one pot. How simple is that? And your family will love it!

Ingredients
  • 1 package chicken tenderloins (about 6-7 in a package)
  • 4-5 yellow squash
  • 1 small Vidalia onion
  • 5-6 small Yukon Gold potatoes
  • Salt and pepper to taste
  • Dash garlic salt
Instructions
  1. Cut up the onion, potatoes and squash into quarters.
  2. Season with salt, pepper, and a little garlic salt.

  3. Dredge the squash in flour. Shake off excess. 

  4. Heat oil in skillet. Put potatoes in first and then onions and squash. Turn with a spatula as they brown. 

  5. In a separate skillet, brown the chicken tenderloins and remove from pan. Cut into diagonal pieces and add to vegetables when vegetables are about done.

  6. Turn the heat down after vegetables are tender and put a lid on for a bit after adding chicken. 

  7. Remove from heat once all ingredients are heated through.
