Maple Cinnamon Sweet Potato Bread for breakfast or snack!

When Candace went to Mama’s last week, she noticed that Mama had several pints of cooked sweet potatoes in her freezer. When she questioned Mama about it, Mama told her she had put them up to make something with the sweet potatoes later. So, Candace found a couple of recipes using sweet potatoes and sent them to me. One was the recipe for this Maple Cinnamon Sweet Potato Bread from Rebooted Mom’s website. So, guess what Mama and I made last week??? MAPLE CINNAMON SWEET POTATO BREAD, of course!!!

Mama and I had made a couple of breads using sweet potatoes last fall: Mama’s Harvest Bread, Sweet Potato Bread with Streusel Topping. So, Mama wanted to compare her recipes with this new one . . . just in case:)

Mama’s Harvest Bread vs. Maple Cinnamon Sweet Potato Bread. . .

There were both similarities and differences in Mama’s Harvest Bread and the Maple Cinnamon Sweet Potato Bread. Both were plain breads, no glaze. Mama said she prefers her breads to be plain. . . (Big Plus for the new recipe). And, both used cinnamon.

The differences were:

  • Mama’s recipe uses orange juice concentrate; the new recipe uses milk and maple syrup
  • The Harvest Bread uses shortening; the Maple Cinnamon bread uses coconut oil (a new try for me!)
  • Mama’s bread uses sugar; the new one uses brown sugar
  • Mama’s recipe did not use ginger, so we left it out of the new recipe
  • The new recipe calls for using one 9×5-inch loaf pan; we used Mama’s 3 smaller 3×5-inch pans

In summary, both are really good sweet potato breads. So you would just have to decide which you want to make!

Before we even started making the Maple Cinnamon Sweet Potato Bread, Mama insisted we get ALL the ingredients out so we wouldn’t miss anything as we made it. GREAT TIP!!!

Then Mama prepared the small loaf pans while I began making the batter. I mixed together the ingredients that would be in the mixing bowl.

Mama measured out all the dry ingredients. Then I finished the batter and scooped it into the prepared loaf pans.

After that, into the oven the loaves of Maple Cinnamon Sweet Potato Bread went! We watched the clock . . . waiting . . . because we KNEW we were going to cut one of the loaves and eat a slice for our afternoon snack! And, let me say, we were NOT disappointed!!! This bread is so moist, and not too sweet, with a hint of the maple syrup flavor. Just right for breakfast or a snack with coffee.

Maple Cinnamon Sweet Potato Bread

Maple Cinnamon Sweet Potato Bread Recipe

Ingredients:

  • 1/4 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1 cup sweet potatoes, cooked and pureed
  • 1/2 cup maple syrup
  • 2 eggs, room temperature
  • 1/4 cup milk
  • 2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions:

  1. Preheat the oven to 350 degrees. Prepare the loaf pans (three 3×5-inch or one regular size loaf pan) by greasing and flouring them/it.
  2. In the mixing bowl, beat coconut oil, brown sugar, sweet potatoes, maple syrup, eggs, milk and vanilla until well blended.
  3. Stir in the flour,  baking soda, baking powder,, and cinnamon. Mix just until combined.
  4. Scoop the batter into the prepared loaf pan–about 1 1/2 cups batter in each, if you use the three smaller pans.
  5. Bake for 30-40 minutes – until a toothpick or knife inserted in the center comes out clean.
  6. Remove from the oven and let cool 10 minutes.
  7. Remove from the loaf pan and cool on wire racks.
  8. Store in an airtight container.
