Mixed Berry Salad, perfect for summer. . .

Summertime and salads go together like snow and winter and sunshine in the spring:) Salads are a perfect choice for a summer meal, especially this Mixed Berry Salad.

Some of the reasons salads are great for summer are:

  • Salads are relatively easy to prepare.
  • They all allow you to utilize fruits and vegetables that are in season.
  • They are generally lower in calorie than some other choices you might make.

There’s nothing better for a delightful lunch than a delicious salad–one that is full of berries of the season, chopped pecans, chopped chicken, and your favorite dressing. Pile the lettuce on your favorite plate, then layer with your choice of berries, or several berries of the season, like the Mixed Berry Salad above. Finally, drizzle with your favorite dressing, and dig in! We like the Mixed Berry Dressing, but your favorite Poppy-seed Dressing is good also.

It is also a great recipe to make if you have leftover baked or grilled chicken!

Mixed Berry Salad Recipe

This Mixed Berry Salad is perfect for summer when strawberries, raspberries, and blueberries are readily available.

Course: Salad
Servings: 4 salads
Ingredients
Salad Ingredients
  • 8 cups chopped lettuce
  • 1 cooked chicken breast chopped into bite size pieces
  • 20 strawberries sliced
  • ¾ cup blueberries or raspberries
  • ½ to ¾ cup dried cranberries
  • ½ to ¾ cup chopped pecans
  • ¼ cup feta cheese
Mixed Berry Dressing Ingredients
  • 1 ½ cups vegetable oil
  • ¾ cup raspberry wine vinegar
  • ½ cup mixed berry preserves
  • ¼ cup granulated sugar
  • ¼ cup Dijon mustard
  • 1 tablespoon poppy seeds
  • 1 tablespoon or more minced onion
Instructions
Instructions for making the Salad:
  1. Place lettuce into salad bowl.
  2. Add remaining ingredients and toss to serve.
  3. Drizzle with Mixed Berry Dressing.
Instructions for making the Dressing:
  1. Mix oil and wine vinegar together in a blender. Pulse to combine.
  2. Add preserves, sugar, Dijon mustard, poppy seeds, and minced onion.
  3. Pulse just enough to combine.


  4. Yield: 4 salads

Recipe Notes

Note: Add more oil if the consistency is too thick.
