Have you ever struggled to cook bacon “just right” where it wouldn’t be too crispy (burnt as my husband says) or not cooked well enough? I have. . . more times than I like to admit! And, generally, I cook mine too long. . . and that’s all I can say about that:)
Having grown up in a family that liked bacon, you would think I would have figured out how to fry it like my mother. We not only had it with our breakfast (if we were lucky), Mama would add it to any beans she cooked. And fried potatoes were ALWAYS cooked in bacon grease. That’s the old Southern way:). Well, after years of trying to fry bacon in a cold skillet, over medium heat, I still over cook it.
