What do you do when you have bananas that are a little overripe? You make Peanut Butter Banana Chocolate Chip Cookies! These cookies were a bit of an experiment for me. I’ve made Mama’s Peanut Butter Cookies many times, and Grandmama Hall’s Banana Nut Cookies, but I never thought to put the two together until I saw a recipe for Peanut Butter Banana Cookies on Pinterest. The original recipe was from Ali on Gimme Some Oven.

Making the Peanut Butter Banana Chocolate Chip Cookies . . .

These Peanut Butter Banana Chocolate Chip cookies are easy to make. Basically there are two steps:

  • Mix dry ingredients together
  • Mix all other ingredients together in the mixing bowl, along with the dry ingredients.

Simple. This is a good cookie recipe to teach children, especially if they like chocolate chip and peanut butter cookies. Pssst . . . if they don’t like bananas, don’t tell them a banana is in the cookies! LOL! You can hardly taste it anyway:)

I did make one change to Ali’s original recipe . . . I added the chocolate chips, which were not in her recipe. My thinking was that if they were good in Grandmama Hall’s Banana Nut Cookies, they would have to be good in these!

The end result is that these Peanut Butter Banana Chocolate Chip Cookies were slightly crispy on the outside, moist on the inside. And, the banana flavor was just barely there, certainly not overpowering in the cookies. Plus the chocolate chips added that little something extra, making these cookies a tasty treat! The second day, the cookies were soft and moist because of the banana in them.

Peanut Butter Banana Chocolate Chip Cookies Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup butter, (1 stick) softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1/2 cup mashed banana (about 1 medium banana)
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Heat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a separate bowl, whisk together flour, baking powder, cornstarch, salt, baking soda and cinnamon until combined. Set aside.
  3. In the mixing bowl, cream the butter and brown sugar together on medium-high speed until light and fluffy, about 1 minute.
  4. Add peanut butter, egg, mashed banana, and vanilla, and continue mixing on medium speed until combined, scraping down the sides of the bowl once if needed.
  5. Next, add dry ingredients and mix until just combined.
  6. Add chocolate chips and fold in.
  7. Using a 2-inch cookie scoop, scoop out the cookie dough, roll it into a ball, then place on the baking sheet. Flatten slightly with your fingers.
  8. Using a fork dipped in flour, press down the top of each cookie dough ball and make a criss-cross pattern.
  9. Bake for 8-10 minutes or until slightly golden around the edges.
  10. Cool for 10 minutes on baking sheet, then transfer to a wire rack to cool completely.
  11. Serve immediately or store in a sealed container for up to 1 week.
