Strawberry Pecan Chicken Salad!

When thinking about what to make for lunch in the summer, there are many foods to choose from. But salads seem to be a favorite, at least for me! And the Strawberry Pecan Chicken Salad is the absolute best.

This salad consists of romaine lettuce, baked or grilled chicken, strawberries, feta cheese, and toasted pecan halves, topped with your best Poppyseed Dressing–homemade or store-bought.

I first had this salad a couple of years ago and immediately thought it was the best salad I had ever eater! I’ve had it many times since. And, every time I eat it, I love it even more!

A Quick and Easy Salad . . .

One of the great things about this Strawberry Pecan Chicken Salad is that it is a quick and easy salad to make if you take some steps to do some advance preparations, like:

  • Plan to have this salad the day after you have baked or grilled chicken leftover.
  • Keep fresh lettuce and strawberries in your refrigerator.
  • Use a really good store-bought poppy seed dressing.

More steps for some advance preparations. . .

There are more steps that can be done in advance for making this salad:

  • I purchase either chicken breasts or chicken tenderloins, then bake or grill them in advance. You can season them with salt and pepper or whatever spice you like on your chicken. I then put enough chicken for one or two salads in a freezer plastic bag. Then, when I need the chicken, I just thaw it out and cut it in chunks.
  • You can also wash and slice the strawberries earlier in the day and put them in a container with a tight fitting lid. Keep in the refrigerator until you are putting the salad together.
  • You can toast the pecans that day, cool, and store in an airtight container. They will keep in the refrigerator for several days, so you could make these a day to two earlier. Of course, it’s better to toast the pecans the day you make the salad.
  • The lettuce can be washed, dried (I wrap mine in paper towel to get the excess water off), and then cut or torn in bite size pieces early in the day. Put in a plastic zip-top bag and store in the refrigerator until you are ready to assemble your salad.
  • If you make your own Poppy Seed Dressing, it can be made the day before. The store-bought is pretty good, so I don’t make the dressing.

Ingredients for each salad:

  • 2-3 cups romaine lettuce, torn in bite size pieces
  • 1 cup grilled or baked chicken breast, cut in chunks
  • 1/2-3/4 cup fresh strawberry slices
  • Feta cheese, sprinkle a little or a lot (whatever you like)
  • 1/4 cup toasted pecan halves
  • Poppy Seed Dressing–homemade or store-bought


  1. Place the lettuce in the plate.
  2. Place chicken chunks evenly on the lettuce.
  3. Sprinkle the strawberries on next as evenly as possible.
  4. Sprinkle on the amount of Feta cheese you prefer.
  5. Finally, sprinkle on the pecans.
  6. Drizzle with Poppy Seed Dressing upon serving.
