Apple Cake with Cream Cheese Pecan Frosting!

There's nothing better than homemade apple cake in the fall! Last week, I decided to make an Apple Cake with Cream Cheese Pecan Frosting with the apples my husband brought home. I looked through several apple cake recipes, and finally decided to make this one from my, once again, Katy's Corner cookbook. I wasn't in the mood to make a bundt cake, nor did I want to make a layer cake. So, this one, made in a 9x12-inch sheet cake pan, was perfect. Making the Apple Cake with Cream Cheese Pecan Frosting . . . In looking at Katy's recipe, I noticed that it called for 1 1/2 cups of oil. That seemed like a lot of oil, but with 3 cups of chopped apples, maybe it was ok. I checked out one of Mama's recipe, and it uses 1 cup of oil, so the extra … [Read more...]

Southern 12 Yolk Pound Cake, YUM!!!

What do you do with 12 egg yolks??? Last week, we had 12 egg yolks left from making buttercream batter. I just don't like to throw away food, so I decided I would find a way to make something with them. When I googled what to make with egg yolks, this beautiful 12 Yolk Pound Cake came up from Call Me PMc's blog. So, I took the egg yolks to Mama's on Friday and told her we were going to make this 12 Yolk Pound Cake. Mama, a seasoned southern cook, was skeptical. She said, "All pound cakes have a pound of butter in them, and this recipe doesn't even call for butter." But, Mama, being the good sport that she is, consented to help me make this pound cake. All through the making and baking process, Mama didn't say a word. When the cake began … [Read more...]

Grandmama Hall’s Coca Cola Cake

Grandmama Hall's Coca Cola Cake . . . When I was a child, Grandmama Hall would make her Coca Cola Cake for us for our after-school treats. It was such a wonderful surprise to go to her house and find these moist, chocolatey squares wrapped in waxed paper. We, her grandchildren, thought this was the absolutely best treat she would make for us. And, even today, it is one of the best chocolate cakes you will ever eat! So, I decided to make it as a birthday cake for Candace on her birthday last week, March 13th. And, since Trey's birthday was on March 3rd, both of them came over to eat some of the cake! (I sent Jason's piece home with him Thursday, since he wasn't here with the other two.) About Grandmama Hall's Coca Cola Cake . . … [Read more...]
