Mama's Hot Chicken and Rice Salad, the perfect entree for a luncheon! Throughout Mama's life, she has prepared food for different functions at her church . . . primarily her UMW (United Methodist Women) group. And, one of the dishes most loved has been Mama's Hot Chicken and Rice Salad! It is similar the the Huntington Chicken we make, but doesn't have the noodles, and some other ingredients are different. So, when I decided to have a "Girls Only Luncheon" for my family in my hometown, I immediately thought about this recipe for the main dish. Chicken Cobb Salad, perfect for a delightful lunch! One salad I haven't made until recently is a Chicken Cobb Salad. Since I'm not a fan of avocados, I have steered away from this salad. But, because I like salads and/or wraps for an easy lunch, I decided to make my first one. Yum! I was pleasantly surprised at all the varied flavors in this delightful salad! Santa Fe Chicken Salad for an easy lunch! Salads in the summer are the perfect choice for lunch. And this Santa Fe Chicken Salad is sure to be on your FAVS list! I had seen a similar one posted online that had lots of ingredients. Since I'm moving more in the direction of simpler recipe . . . especially for lunch . . .I decided that I could make one much easier. All I had to do was use my Corny Mexican Dip as one of the ingredients! We have made this dip several times, and IT IS ADDICTIVE!!! You can eat it as a dip or a side dish for a Mexican dish. Grilled Chicken Salad with Apples for a Spring Lunch . . . I love salads for lunch. The days I work at Candace's shop, I always eat a salad . . . the Strawberry Pecan Chicken Salad or the Chicken Bacon Ranch Salad. There's just something about a salad that is refreshing for lunch.
