"An Apple a Day" . . . Fall is upon us. And with fall comes apples! I should say, apple season, because apples are available all year.  But they are better now. And, if you don't want to literally EAT your apples raw, you can eat them in this delicious Apple Congealed Salad! I know that congealed salads have fallen out of favor currently, so my daughter and sister tell me, but both Mama and I love them. Apple Waldorf Salad for Fall!

Apples, apples and more apples . . . I had bought over a dozen Granny Smith and Red Delicious apples, planning, of course to make some of my favorite apple recipes. So, when I planned the "Girls Only Luncheon", I thought about making an Apple Waldorf Salad as one of the dishes. It is delicious, and it uses apples, so I knew it would fit in the "apple" theme for my luncheon. Broccoli Apple Salad, and Mama’s matchstick carrots!

Broccoli Apple Salad for our "Girls Only Luncheon" . . . One of the salads for our "Girls Only Luncheon" was a Broccoli Apple Salad. We've often made a Broccoli Cauliflower Salad, but I had found a recipe on Pinterest by Cooking Classy, that used apples. Mama's Hot Chicken and Rice Salad, the perfect entree for a luncheon! Throughout Mama's life, she has prepared food for different functions at her church . . . primarily her UMW (United Methodist Women) group. And, one of the dishes most loved has been Mama's Hot Chicken and Rice Salad! Chicken Cobb Salad for a delightful lunch!

Chicken Cobb Salad, perfect for a delightful lunch! One salad I haven't made until recently is a Chicken Cobb Salad. Since I'm not a fan of avocados, I have steered away from this salad. But, because I like salads and/or wraps for an easy lunch, I decided to make my first one. Yum! I was pleasantly surprised at all the varied flavors in this delightful salad!
