Spring is coming, and we start thinking about salads. This Apple Waldorf Salad is delicious as a salad, a side dish, or even a dessert. The beauty of this salad is that you can serve it any season of the year. Apple Waldorf Salad . . . a great salad to make for any season. I had bought over a dozen Granny Smith and Red Delicious apples, planning, of course to make some of my favorite apple recipes. Apple Pear Waldorf Salad for Fall!

Waldorf Salad . . . with a twist! We have all heard of, and probably eaten, a Waldorf Salad at some time in our lives. It is the salad that is usually made with fresh apples, celery, grapes and walnuts with a mayonnaise dressing, and is quite popular in the fall. Recently I have made two or three different Waldorf Salads, the most recent one is this Apple Pear Waldorf Salad. I decided to add pears and dried cranberries (instead of grapes) to my classic Waldorf Salad after I  bought a bag of beautiful pears at our local Kroger store. Autumn Apple Chicken Salad, a fall delight!

Autumn Apple Chicken Salad, the perfect fall lunch! In keeping with my "I love a salad for lunch!" mentality, I found a recipe for an apple chicken salad from It used similar ingredients to those I like to put in my salads, like baked chicken, dried cranberries, feta cheese and pecans. Apple Congealed Salad, for an “apple a day”!

"An Apple a Day" . . . Fall is upon us. And with fall comes apples! I should say, apple season, because apples are available all year.  But they are better now. And, if you don't want to literally EAT your apples raw, you can eat them in this delicious Apple Congealed Salad! I know that congealed salads have fallen out of favor currently, so my daughter and sister tell me, but both Mama and I love them. Broccoli Apple Salad, and Mama’s matchstick carrots!

Broccoli Apple Salad for our "Girls Only Luncheon" . . . One of the salads for our "Girls Only Luncheon" was a Broccoli Apple Salad. We've often made a Broccoli Cauliflower Salad, but I had found a recipe on Pinterest by Cooking Classy, that used apples. And, since the theme for my luncheon menu was primarily "apples", I decided to try this one. The Broccoli Apple Salad looked so delicious in the pictures with the dark green broccoli, chopped apples, dried cranberries and pecans . . . all ingredients that I like . . . with one exception . . . carrot matchsticks!
