Very Berry Salad . . . a perfect salad for Memorial Day!

Memorial Day is coming soon, and this Very Berry Salad is a perfect salad for Memorial Day! I, for one, can hardly believe it’s almost summer, but I know my grandchildren are “happy campers”:)

Because Memorial Day is a Patriotic holiday, where we remember and honor those who died serving in the armed forces for our country, the red-white-and blue of this Very Berry Salad is an appropriate choice to serve during the weekend of Memorial Day. I saw a similar salad online and decided to make my own version of this Patriotic Salad!

Very Berry SaladMaking the Very Berry Salad . . . Preparation comes first!

The Very Berry Salad is easy to make. The most time consuming part is baking or grilling the chicken. But, if you are like my Mama, you usually have baked chicken breasts in the freezer. However, if you don’t have some baked chicken on hand, you can usually bake a few chicken breasts in about 30 minutes at 350 degrees. To be sure they are done, use a meat thermometer in the meatiest part of the largest piece of chicken. When it registers 160 degrees, you can take it out of the oven and set it aside to cool a bit.

The next step would be the washing of the fruits and lettuce. Be sure to rinse both well, and set aside on paper towels to dry for a few minutes. When done, slice the strawberries and tear the romaine lettuce in bite size pieces.

Once your chicken, fruits and lettuce are ready, it’s time to put the salad together. Usually I make each salad individually on the plates, but you can layer it in a salad bowl. The only drawback to that is that your blueberries will probably sink to the bottom of the bowl:)

Layering the Very Berry Salad . . .

Putting the Very Berry Salad together is a cinch . . . it simply requires layering! The salad ingredients are layered in the following order on each plate:

  • Lettuce
  • Chicken
  • Strawberries
  • Blueberries
  • Feta Cheese
  • Sliced Almonds

The last step is, of course, drizzling each salad with Poppyseed Dressing. You can either make your own or buy a really good one at your local grocery store. Some of the brands are really good. Then, it’s time to eat! This Very Berry Salad is simply delicious and so colorful with the beautiful fruits and the green lettuce. It is truly “eye candy” when you are hungry:)

Very Berry Salad Recipe

Ingredients for 4 salads:

  • 8 cups chopped lettuce
  • 2 chicken breasts, chopped into bite size pieces
  • 20 strawberries, washed, dried, sliced
  • 1 cup blueberries, washed, dried
  • ¼ cup feta cheese
  • ½ to ¾ cup sliced almonds

Instructions for each salad:

  1. Place 2 cups lettuce on each salad plate.
  2. Next, add the chicken pieces on top of the lettuce–about 1/2 breast per salad
  3. Sprinkle about 1/3-1/2 cup sliced strawberries on next.
  4. Next, sprinkle about 1/4 cup blueberries per salad.
  5. Sprinkle with about 1 tablespoon feta cheese.
  6. Lastly, sprinkle sliced almonds on top, as few or as many as you want.
  7. Drizzle with Poppy seed Dressing.
