Aunt Kathleen’s Baked Parmesan Chicken Breasts . . .

Last week, my daughter, Candace, posted a picture of some Parmesan Chicken Breasts she had made for their dinner. Her recipe had to be marinated, which I didn’t want to have to do, so I got out my Aunt Kathleen’s Baked Parmesan Chicken. I had some chicken tenders in the freezer, so I used them. . . convenience! I didn’t want to have to go to the grocery store! This recipe is one of my favorite entrees to make when I want something quick and easy. I generally add a couple of veggies and dinner is served!

Aunt Kathleen . . .

Aunt Kathleen was Mama’s sister-in-law. She married Mama’s brother, Lamar in the 1940’s. They had two daughters: LaNan and Vicki. LaNan is a caterer in my hometown and Vicki is a retired school teacher. She helps LaNan with her catering.

Aunt Kathleen passed away a couple of years ago, but her cooking legacy lives on with her recipes . . . she had given Mama this recipe some years back . . . and with her girls and their cooking endeavors.

Aunt Kathleen’s Baked Parmesan Chicken Recipe . . .

Aunt Kathleen’s Baked Parmesan Chicken recipe is SOOO simple: 3 ingredients, and the chicken is tender and juicy when done. While the recipe calls for chicken breasts, you can use chicken tenders or other pieces of the chicken. You would just have to monitor the cooking times.

This is a great recipe to make when you are too tired to cook. Add a baked potato and some green beans or a green salad, and you are good to go with a fast and easy meal for your family.

What would you serve with Aunt Kathleen’s Baked Parmesan Chicken?

Other chicken entrees that are fairly easy to make are Jennifer’s Chicken and Veggie Fry, Cheddar Bacon Chicken Breasts, and  Chicken, Spinach and Brown Rice.

This Baked Parmesan Chicken recipe is a quick and easy entree. Three ingredients, plus a short baking time and you will have tender, juicy chicken breasts or chicken tenders.

Course: Main Course
Cuisine: American
  • 3 chicken breasts
  • ¾ cup Parmesan cheese
  • ½ stick butter, melted
  1. Dip chicken breasts in butter.
  2. Roll in Parmesan cheese and bake at 350 degrees for 45 minutes.
Recipe Notes

NOTE: Because I used chicken tenders, I only baked mine 20 minutes on one side, then around 10 minutes on the other. I checked it with a meat thermometer and when it was at 165 degrees, I took them out.
