Candace’s Streusel-Topped Pumpkin Muffins!

Another pumpkin treat! Candace invited us over for dinner Sunday evening. She made Chicken Gumbo, Mama's Jalapeño Cornbread, and these pumpkin muffins--Candace's Streusel-Topped Pumpkin Muffins. All the food was wonderful, especially these pumpkin muffins! She had me bring a Chocolate Pie (which I will blog later) for dessert. I said, "OK, as long as you let me blog your muffins!" DEAL!!! Pumpkin Cranberry Pecan Muffins for fall!

Muffins anyone? I love muffins . . . just about any kind of muffins. My Mama does too:) So, when I was able to create this recipe for Pumpkin Cranberry Pecan Muffins, I made some for her and for us. These muffins are delightfully delicious, with dried cranberries and chopped pecans, but they aren't too sweet. Just right, in our opinion. And, since October is a month to make anything pumpkin . . . pumpkin pie, pumpkin cookies, pumpkin muffins, and even pumpkin bread . . . the time was perfect to make these muffins. Whole Wheat Peanut Butter Banana Nut Muffins!

Which Banana Muffins to make? Once again, Lynn bought bananas. And when they became too ripe, he wanted me to make Banana Nut Muffins. Not just any banana muffins, these had to be HEALTHY banana nut muffins! Well, with bananas and nuts, that's pretty healthy, don't you think? But, as I looked through Pinterest, I found a banana nut muffin recipe from Ask the Food Geek that had whole wheat flour and peanut butter. Girls Only Luncheon, a Fall Family Gathering!

Our Girls Only Luncheon, a Fall Family Gathering! Apples are in season now. And with that comes many opportunities to make and create delicious apple salads, desserts, and even breads! Plus, it gives us a chance to celebrate both the change in season from summer to fall. With that in mind, I decided to host a "Girls Only Luncheon" for my Mama, my sister, Jeri, and her two daughters, Amber and Cara, and my two cousins, LaNan and Vicki. I planned for it to be served at Mama's house, because they all live in her hometown, and I would be there anyway on Friday. Spiced Sugar and Cinnamon Apple Muffins!

Muffins for our Chef Candace Breakfast for Dinner Party . . . Tonight we had our Chef Candace "Breakfast for Dinner" Party. It was a dinner/staff meeting where everyone brought something that would be a "breakfast food". After going through several cookbooks, I decided to make these Spiced Sugar and Cinnamon Apple Muffins. It's almost fall, and I had some apples, so why not? The recipe for these muffins was in my "Katy's Korner" cookbook from the 1980's. Katy's Korner was a tearoom in Eureka Springs, Arkansas during that time.
