What's for dinner? The eternal question for working moms . . . and even us retirees: What's for dinner? When I work at Candace's shop, the last thing I want to think about is cooking dinner. I look for recipes I can put together fairly quickly, and still be tasty and nutritious. That's where this Easy Chicken Stew with Brown Rice comes in. I found a collection of Sukkot recipes. Mama's Chicken and Dumplings, Comfort food. . . One of the things I like about fall is comfort food, and there's nothing better than Mama's Chicken and Dumplings! Comfort food takes us back to our childhood; they reminds us of certain meals that we really liked, people we loved, family times, or places we were fond of. One of those dishes for our family was, and is, Mama's Chicken and Dumplings. Mama has made them as far back as I can remember. She always makes them for our family holiday dinners (Thanksgiving and Christmas). In her words, she has to now make "4 recipes" of the dumplings since our family has grown to 33 people. Jennifer's Chicken and Veggie Fry, a delicious and easy main dish! Every week, I go teach my son, Trey, and daughter-in-law, Jennifer's three children piano lessons . . . three of my TEN grandchildren--Bethany, Brady and Benson. They are so smart and talented, I count it an honor and a joy to teach them. And, just about every time I go, Jennifer bags supper up for me to take home for our dinner! Girls Only Luncheon, a Fall Family Gathering!

Our Girls Only Luncheon, a Fall Family Gathering! Apples are in season now. And with that comes many opportunities to make and create delicious apple salads, desserts, and even breads! Plus, it gives us a chance to celebrate both the change in season from summer to fall. With that in mind, I decided to host a "Girls Only Luncheon" for my Mama, my sister, Jeri, and her two daughters, Amber and Cara, and my two cousins, LaNan and Vicki. I planned for it to be served at Mama's house, because they all live in her hometown, and I would be there anyway on Friday. Chicken and Rice Dumpling Casserole, a leftover delight!

What do you do with leftover rice and baked chicken? If you are like me, you don't like to throw food away. But, unless you have a plan to use the leftovers, that's exactly what happens more times than not. That's where this Chicken and Rice Dumpling Casserole comes in!
