St. Patrick’s Day is coming soon! I love This little holiday with the “wearing of the green”, the leprechauns, shamrocks, and the traditional Irish foods! And let’s not forget the legend of St. Patrick as well as the true story of his life. We all remember the story of St. Patrick banish all the snakes out of Ireland. Right? Well that is a legend. But did you know he was an ordained priest who went to Ireland to share Christianity with the Irish people? Lots of good things to share about St. Patrick and St. Patrick’s Day.

One of the best things about St. Patrick’s Day, in my opinion, is the food! And, a favorite recipe I like to make is Irish Stew with Noodles. I found this several years ago when researching different foods for this holiday.

The first time I made this Irish Stew with Noodles was for a dinner I hosted for Lynn’s sister, Carol, and her husband, Joe Thennes, a few years ago. Carol’s birthday is . . . ST. PATRICK’S DAY! What fun we had celebrating one of my favorite holidays on her birthday!

Everyone probably knows what Beef Stew is. Our mothers and grandmothers made it all the time:) But, do you know what Irish Stew is?

Irish stew typically is any variety of meat-and-root vegetables stew native to Ireland. The recipe I made uses beef, carrots, potatoes, and onions in a tomato gravy that is served over noodles.

St. Patrick's dayThis Irish Stew with Noodles recipe, which is one of my “go-to” dishes for St. Patricks’ Day or any day when you want a hearty meal, is relatively easy to make. It uses vegetables and canned ingredients you probably have in your pantry plus round steak. Simple . . . Brown the meat, add the other ingredients, simmer, boil the noodles and you have a delicious meal! Just add some hot crusty bread, and a green salad or vegetable for tasty St. Patrick’s Day dinner.

Irish Stew with Noodles Recipe

This Irish Stew is a delicious main dish for St. Patrick's Day. The beef is smothered in a tomato gravy, then served over cooked noodles. Filling and SO tasty!

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds trimmed boneless beef round steak, cut in chunks
  • 2 tablespoons flour
  • 1 onion, chopped
  • 1 (14 1/2-ounce) can beef broth
  • 1 (14 1/2-ounce) can diced tomatoes
  • 3 medium potatoes, cut in chunks
  • 3 medium carrots, cut in 1/2-inch pieces
  • Hot cooked wide egg noodles
  1. Heat oil in a large pot (5-quart) over medium heat.
  2. Salt and pepper the beef chunks. Coat with flour.
  3. Add coated beef chunks to the pot with the chopped onion.
  4. Cook and stir until browned and onion is tender.
  5. Add broth and tomatoes. Stir to combine.
  6. Bring to a boil, stirring, then reduce heat to low. Cover and simmer 30 minutes.
  7. Add potatoes and carrots. Cover and cook on simmer an additional 30 minutes or until the vegetables are done.
  8. Remove cover and simmer until the meat is tender and the sauce is thickened. You will have to stir occasionally.
  9. Serve over hot noodles.
