Slow Cooker Beef and Peppers for an easy meal!

I’m always looking for an easy meal, especially for Sundays. Years ago I made Pepper Steak in a skillet, which was really good. So I did some research on how to make a Slow Cooker Beef and Peppers. I needed something that I could put in the slow cooker, a.k.a. Crockpot, before church so it would be ready when we got home. And, this recipe worked out quite well!

My Beef and Peppers vs. the Slow Cooker version:

My Pepper Steak, as it was called, started with round steak, was cut into cubes, and then browned in a skillet. The green peppers were cut in strips, added to the meat with soy sauce, and then simmered until the meat was tender. It did not have onions.

The Slow Cooker Beef and Peppers  that I made used stir-fry beef  that was cut in strips, not chunks. It was thin, which allowed it to cook faster. All the ingredients, which included onions, minced garlic,  AND green pepper (cut in chunks) were placed the slow cooker with the meat, beef broth, and soy sauce. Before serving, it was thickened with a roux.

Both recipes are really good. The Peppered Steak can be made on the stove in about an hour, while the Slow Cooker Beef and Peppers can cook while you do other things. The choice is yours as to which fits your lifestyle. I haven’t blogged the Peppered Steak yet. Later on that one:)

Making the Slow Cooker Beef and Peppers . . .

Simple. Simple. Absolutely Simple. This has to be one of the most simple slow cooker meals I have made. The meat was already cut at the grocery store. It didn’t require any browning. All I had to do was literally cut the onion, green peppers, and then place all the ingredients in the slow cooker, turn it on and go . . . Perfect! And then, when I got home, I thickened the sauce while the rice was cooking, about 20 minutes. Easy!!! One person said she serves hers over Mashed Potatoes. What do you think?

Slow Cooker Beef and Peppers

Slow Cooker Beef and Peppers Recipe

Ingredients:

  • 1 pound stir-fry beef chunks
  • 1 medium onion, roughly chopped
  • 2 scant teaspoons minced garlic (I use the kind in the jar so I don’t have to buy garlic cloves)
  • 2 green bell peppers, cut in chunks
  • 1 3/4 cups beef broth
  • 1/4 cup soy sauce
  • Salt and pepper to taste
  • 2 tablespoons flour (or 1 tablespoon cornstarch) mixed with a small amount of the hot sauce to thicken at the end of the cooking time

Instructions:

  1. Place the meat in the slow cooker that has been sprayed with non-stick cooking spray.
  2. Throw in the rest of the ingredients and roughly stir.
  3. Cover and cook on low for 5 to 6 hours or on high for 3-4 hours.
  4. If you want to thicken the sauce, take a ladle of the sauce and whisk it together in a small bowl.
  5. Pour the sauce back into the slow cooker and stir to combine.
  6. Increase to HIGH heat, cover, and let cook while the rice is being made.
  7. Serve over rice.
