Aunt Kathleen’s Spaghetti and Meat Sauce for Valentine’s Day!

I first posted this in 2014. It is my "go-to" Valentine's Day dinner. Italian is always an excellent choice for a lovely dinner. And my Aunt Kathleen's Spaghetti and Meat Sauce is my favorite. Add a salad, French bread, a chocolate dessert and celebrate! Today is Valentine's Day. . . As I pondered for two days what to make for our Valentine's Day dinner, I finally decided on Aunt Kathleen's Spaghetti with Meat Sauce. For years spaghetti and meat sauce was my "go-to" Valentine's dinner. When my children were small, this is what we would always have. I usually made a Min's Italian Spaghetti and Meat Sauce, and it's still one of my favorite recipes. However, it has to cook for 4-5 hours. Smothered Cube Steaks Recipe, a favorite comfort food!

Smothered Cube Steaks is comfort food to me! Nothing says "comfort food" to me like Smothered Cube Steaks. My Grandmama Hall used to make this a lot, served it with mashed potatoes and English Peas. She served EVERYTHING with English peas! I loved the tender pieces of meat covered with the creamy gravy and sautéed onions. It reminds me of times in my childhood when I would be at Grandmama's house. Mama also would make the Smothered Cube Steaks, so it is, and has been, a favorite of mine since I was little. Smothered Cube Steak, the perfect … [Read more...]

So, when I had a zip-top bag of beef chunks left from the beef tenderloin Candace cut up for me, I decided that I wanted to make this stew. Her husband, Randy, sent me a message to save him a bowl:) So . . . I did! Making the Old-Fashioned Beef Stew . . . I … [Read more...]

Filet Mignon with Dijon Mustard Sauce, a Delicious Entree!

Filet Mignon for the Birthday Dinner! When I was planning the Birthday Dinner for my children, Candace suggested I make Filet Mignon with Dijon Mustard Sauce as the entree. I made this for her family several years ago, and my son-in-law, Randy, LOVED it! In fact, Candace says he still talks about it . . . that it was the best filet mignon he ever had! Wow! How could I not make this dish for the big birthday celebration??? But, with 14 people coming, the cost of individual filets came up in the conversation. Candace said not to worry . . . she learned how to trim and cut beef tenderloin when she was studying for her degree in nutrition, and also when she worked for her Aunt Elizabeth who had a little restaurant in North Little Rock, … [Read more...]
