Chocolate Banana Cake! (Cooking with Grandkids)

Chocolate Banana Cake for Daddy! The day before Trey was to come home from the hospital, Benson baked his daddy a Chocolate Banana Cake. The night before, I had asked all three of them, Bethany, Brady and Benson, what they wanted to cook for their dad. Benson chose this Chocolate Banana Cake that I found on the Brown Eyed Baker website a few days earlier. Who would have thought of a chocolate cake with banana? Mississippi Mud Cake for dessert!

What's for dessert? I'm kind of like my Grandmama Hall. I like to have a "little something sweet" after a meal, which means that I have to have something sweet to eat! Well, that's where I found myself over the weekend. . . pondering . . . what to bake for dessert? My mind kept going back to Mississippi Mud Cake. Why? I don't know. I think I've only made it once or twice before, but the marshmallow layer kept bringing me back to this tempting dessert. Possum Pie: an Arkansas pie!

Who ever very heard of Possum Pie??? I know I hadn't! But, when Lynn was in the hospital, I bought several magazines so I would have something to read to pass the time. One of the magazines was, "Taste of the South", and on the front cover was "Possum Pie"! This luscious chocolate pie was featured with the subheading, "The "secret" State Pie of Arkansas". It must have been a well kept secret because I've lived in Arkansas my whole life, and had never heard of it! But the picture of this pie kept saying, "Make me!" So. I. Did!!!
