Coconut Oatmeal Pecan Cookies, for Crispy Cookie Lovers!

Any Crispy Cookie Lovers out there? While some in my family like soft cookies, I prefer crispy ones. I think it goes back to my childhood eating the Lunchroom Ladies Oatmeal Cookies. Anyway, most of the cookies I make are softer, but when I found these Coconut Oatmeal Pecan Cookies, I thought I had really found a "keeper"! Oatmeal Crispies Cookies, a favorite for crunchy cookie lovers!

Who likes Crispy Oatmeal Cookies? I was thinking the other day about oatmeal cookies. Over the past several years, we have been making a softer oatmeal cookie rather than a crispy one. So I decided to look up an older oatmeal cookie recipe that I had many years ago and make them. They turned out to be crispy! So, I named them Oatmeal Crispies Cookies! Making the Best Chocolate Chip Cookies with Randa. . . I first shared this post when Randa was 8 years old. Now she is 10. Wow . . . I can't believe two years has past since we first made these delicious Chocolate Chip cookies! (Randa today) Grandchildren are such a blessing! And I am very blessed! Mama and her Peanut Butter Cookies!

Making Peanut Butter Cookies with Mama . . . When I got to Mama's house last week, she had her cookbook out and the page turned to her Peanut Butter Cookies recipe. She had intended for us to make the cookies, but she gets tired easily and had decided not to do it. But, later in the day, I told her I would make them for her. That's all it took for her to get up and start making the cookies. Because, you see, Mama likes to keep cookies on hand for company as well as for herself.
