Xiomara's Authentic Guacamole from Guatemala! We were so blessed to have Xiomara show us/ teach us how to make her Authentic Guacamole at our "South of the Border Cultural Food Fair" last week. Xiomara and her husband, Benjamin, who are from Guatemala, came to the United States in the 1980's. She shared with us how to make her Chicken Enchiladas, Mexican Rice, and this Guacamole. Amalia’s Authentic Pico de Gallo!

Amalia's Authentic Pico de Gallo, the real thing!!! Saturday was our "South of the Border Cultural Food Fair" at our church. Two of our Hispanic ladies prepared a delicious meal for us from their home countries (Mexico and Guatemala). Amalia Cox, from Mexico, made her Pico de Gallo, which I decided to name, Amalia's Authentic Pico de Gallo. After all . . . she should know how to make authentic pico de gallo, don't you think? Quick and Easy Spinach Dip for Mama!

Spinach Dip for Mama! When I got to Mama's last week, she said she wanted me to take her to the local grocery store because she wanted to make Spinach Dip. My cousins, LaNan and Vicki, had taken some to Mama a few weeks before, and she LOVED it! So, she wanted some more! And nothing would have it except I take her to get the ingredients and help her make some Spinach Dip. That's my Mama! Making the Spinach Dip . . . On one of Mama's grocery shopping trips, she had bought a quart of mayonnaise with a packet of Knorr's Vegetable recipe mix attached to it. Guacamole, Family Style!

Guacamole . . . a family favorite! Guacamole, has been a favorite Mexican dish since I was a child, and nothing has changed! It is still a family favorite, at least with daughter's family. They like it so  much, now their children, my grandchildren, are making it! Most people eat guacamole either as a dip or as a sort of salad with their Mexican food meal. My family eats it primarily as a dip. I have never made Guacamole, so when Candace called me to help make dinner for her family after her surgery, I was delighted to watch Cameron and Benjamin, with a little help from mom, go to work making this.
