Quick and Easy Chicken and Rice Soup for lunch or dinner! One of my favorite soups is this Quick and Easy Chicken and Rice Soup. It's a great soup for either lunch or dinner. This recipe has tomatoes and green chilies, which adds a bit of heat to the soup, which I love, but if your family doesn't like a "slightly hot" soup, substitute another can of diced tomatoes. Mama's Creamy Chicken Noodle Soup . . . yummy! For years Mama has made her Creamy Chicken Noodle Soup. She created the recipe herself, having combined several she liked into this one. So, when I wanted homemade soup Sunday night, I decided to make this soup of hers. Soup for lunch or dinner? If you are looking for a delicious soup for lunch or dinner, look no further! This Cheesy Potato Bacon Soup is tops! It is reminiscent of the Loaded Potato Soup, but without the sour cream and a few other ingredients. Primarily it consists of cheese, potatoes, and bacon! Imagine that!!! I made this Cheesy Potato Bacon Soup for our lunch a couple of weeks ago, and Lynn and I both thought it was delicious. The weather was a bit chilly (unlike today!), and Lynn was not feeling well.
