Xiomara’s Authentic Guacamole from Guatemala!

We were so blessed to have Xiomara show us/ teach us how to make her Authentic Guacamole at our “South of the Border Cultural Food Fair” last week. Xiomara and her husband, Benjamin, who are from Guatemala, came to the United States in the 1980’s. She shared with us how to make her Chicken Enchiladas, Mexican Rice, and this Guacamole. All of the food she showed us how to make were delicious! I’m waiting for the other recipes to share with you soon:)

I chose to name both Xiomara’s and Amalia’s recipes as “Authentic” because their recipes are from their home countries as they prepare them there.

One of the things that both Xiomara and Amalia expressed to us was the difference between the foods prepared in their two countries: Guatemala and Mexico. More on that later.

Besides teaching us how to make her Guacamole, Xiomara gave us tips on choosing a ripe avocado:

  • Choose an avocado that has an overall even dark green and black coloring
  • Hold the avocado in your hand. Gently apply pressure to the avocado. A ripe avocado will yield slightly to the gentle pressure. An unripe avocado will feel like a stone. An overripe avocado will feel loose under the skin and mushy.
  • Choose unbruised and unscarred avocados with no wrinkles.

Making Xiomara’s Authentic Guacamole . . .

I noticed when Xiomara had the avocados in the bowl that there was a seed or two. She said that keeping at least one seed in the guacamole keeps it from turning brown. Good to know!

Lime juice is added to the avocado. Xiomara used a chef’s knife to twist the lime to draw out the juice. That was quite an efficient way to do it . . . I probably would have dug in my drawer of cooking accessories and found my juicer. You know, the kind you place 1/2 of the lime on the spindle and squeeze until the juice is out and drains down into the reservoir underneath. At least with the knife, it is easier to clean:)

Stir, mixing all the ingredients together.

The guacamole is ready to eat! And, the seed is still in there!

The Guacamole was served with tortilla chips. And the feast was one! We all enjoyed all of the foods prepared and shared with us. And, the good thing is that now, we know how to make Xiomara’s Authentic Guacamole ourselves!

Other Mexican/ Guatemalan recipes include Amalia’s Authentic Pico de Gallo, Sopapillas with Vanilla Ice Cream and Fresh Strawberries.
